Seaweed helps keep beer clear and tasty.

There is a technical reason why seaweed is used in the beer brewing process. To remove unwanted protein and reduce the haziness of the brew 'copper finings' are added, which can be derived from seaweeds like Carrageenan.

It's also used like hops to flavour beer, giving it a rich umami flavour. Back in the day, when Scottish farmers used seaweed to fertilise their fields, the barley grains used to take on some its flavour, which was passed onto the brew, something which Kelpie Beer is trying to recreate https://www.williamsbrosbrew.com/beer/kelpie.
