Laverbread
Laverbread is a traditional Welsh dish made from the edible seaweed known as laver (Porphyra species).
Laverbread is a type of purée that is made by boiling the seaweed and then mashing it into a smooth paste (stick with us here..!). It is often rolled in oats and fried to create a patty and served as part of a traditional Welsh breakfast. Or if you want it simple, spread it on toast.
Laverbread has a long history in Welsh cuisine and culture, and has been eaten in Wales for centuries, including by Welsh miners in the C18th to get their mineral fix. Now it's considered a delicacy, but we think it should be normalised again as it's a lush, healthy, local food, which is rich in vitamins, minerals, and other nutrients.
Here is a quick way of making laverbread patties:
Mix oats with laverbread until it forms a patty, fry it, eat it.
Or if you’ve got a bit more time:
Ingredients:
1 cup laverbread
1 cup rolled oats or oatmeal
1 small onion, finely diced
1 clove garlic, crushed
1 egg, beaten
2 tablespoons oil (for frying)
Instructions:
In a mixing bowl, combine all the ingredients well.
Shape the mixture into small patties, about 2cm thick.
Heat the oil in a pan over medium heat. Once the oil is hot, add the patties and cook for 3-4 minutes on each side, or until golden brown.
Remove the patties and drain on a paper towel.
Serve warm, mwynhewch!
